Job Description

Job Objective

To handle the entire kitchens operation with motivation, respect & implement the rules & regulations, maintain& supervise the staff, the tools & equipments
To increase guest satisfaction by ensuring the highest standards of quality, service and presentation are maintained consistently

Main Duties & Responsibilities

To fully understand and perform your job, taking into account your personal competencies, as described below, working with your team to deliver Exceptional quality and taste
To manage all aspects of the kitchen, and oversees all services
To attend any training courses as and when required
To attend to and participate in any meetings (department, communications etc) as and when required
Assist with the training and development of the kitchen when required
To be flexible and to carry out any other duties as requested by Management
To Create and control food quality standards in the kitchen To create a working environment that support organizational values
To communicate, coordinate and provide direction to all kitchen employees and colleagues
To ensure that the kitchen maintains a first class and positive visual impact including quality, consistency cleanliness, orderliness and service flows
To deliver the managements objectives
To ensure that all operational equipment are kept hygienically clean through safe working practices, compliance with standard operating procedures and statutory demands
To supervise the up load & down load of the requisition,
To supervise the Mise En place & cleaning at the kitchen
To check & identify the quality of food
To conduct daily briefing to its team members
To ensure accurate par stock level based on forecasts
To suggest written ideas, but never implement it without written pre approval from the management
To check all quality of raw materials and give suggestions
To supervise EACH AND EVERY plate before being dispatched Managing Standards
Being able to explain the Standards to the team, and training them upon it
Assessing staff performance against Standards In a written report of evaluation
Monitoring Standards through regular Standards Review checks
Developing action plans to address shortfalls in Standards
Implementing and following through improvements identified Managing the daily operation
To plan, organize and control the day-to-day kitchen operation
Preparing rosters and job schedules for staff to meet the business needs
Communicating and delegating duties to the team
Understanding whats going on in other departments and implications for own department
Planning ahead and ensuring adequate resources are available
Managing the department operations and taking action where necessary to ensure smooth running
Ensuring the shift is received, hand-over and briefings are carried out
Maintaining in-depth technical knowledge and skills required for the job
